Chocolate Avocado Pie

If, like me, you have a sweet tooth that really interferes with your healthy lifestyle, fear not! I love experimenting with recipes and finding the perfect sweet treats that aren't as sugar-filled or calorie-dense as some of your favourite snacks.

This Chocolate Avocado Pie is so easy to make; under half an hour from start to finish and less than 10 ingredients! My housemates who devoured the pie quickly can vouch that it didn't taste like some of these typically 'healthy' desserts that can pass for cardboard....

Ingredients:
Crust:
3 tbsp. raw coconut flakes
2 tbsp. coconut flour
2 tbsp. agave
2 tbsp. coconut oil

Filling:
2 medium ripe avocados
40g chocolate protein (I used Missfits Nutrition Chocolate Whey)
40g dark chocolate (I used Lindt 85% dark chocolate)
2 tbsp. agave
2 tbsp. coconut oil
1 tsp vanilla extract
One Punnet of fresh raspberries for topping

Method:
Crust:
In a food processor, combine the coconut flakes and flour until it forms a chunky sand-like consistency.
Add the agave and coconut oil then pulse again to mix.
Pour all of the mixture in to a greased pie dish and press it down to evenly cover the entire base of the pan.
Bake the base for about 10-15 minutes, or until golden and crispy, and then pop in the freezer to chill whilst your you make your filling.

Filling:
In a bowl, melt the dark chocolate and coconut oil together.
In a food processor pulse together all filling ingredients, including the now molten chocolate mix, until smooth and creamy.

ayer the filling mixture over the now-cooled based, smooth out and decorate with fresh raspberries. Store in the fridge until ready to serve. Enjoy!
